BEST POTATO PANCAKES EVER – It’s A Keeper
* Ingredients:
° 4 cups cold mashed potatoes
° 5 slices of bacon
° 1/2 teaspoon onion powder
° Salt 1/2 tsp
° 1/2 teaspoon black pepper
° 2 eggs, beaten well
° 1/2 cup grated cheddar cheese

Place the bacon in a large, deep skillet, and cook over a medium-high heat, stirring occasionally, until it is brown and crunchy for about 10 minutes.
Remove the slices of bacon, set aside, and leave the bacon broth in the skillet.
Mix the mashed potatoes, eggs, onion powder, salt and black pepper together in a bowl.
Adding Crumbled bacon also Cheddar Cheese.
Shape the mixture into 8 pieces.
Heat the bacon broth over medium heat, and fry the patties in the broth until softened on each side, about 4 minutes per side.
