MOM’S FAMOUS CREAM PUFFS

* Ingredients :

 
° 1 large egg, plus 3 large egg yolks

° 1/2 cup sugar

° 1 1/2 teaspoon grated lemon peel

° 1/4 cup plus two tablespoons of freshly Lemon juice

°  salt

° 4 tsps unsalted butter, cutting into chunks


* Directions  :

Whisking together eggs /yolk /suga / lemon juice /juice, & salt. Add to boiling over low heat in a medium saucepan over medium heat, and beat constantly. Cooking until thick, 6 to 7 min. Band  through a fine sieve into a bowl. Whipping butter. Pressure plastic twist immediatly onto surface of lemon curd, also placing it in refrigerator to cool for at least an hour or even overnight.
