List of ingredients


6 eggs

150 g of flour

150 g of sugar

40 g cocoa

75 ml of milk

sour cherries in syrup

1 C. cinnamon

1 sachet of baking powder

2 sachets of vanilla sugar

50 g dark chocolate

50 cl of liquid cream

50 g icing sugar

1 sachet of whipped cream (optional)

Kirsch (optional)


Recipe steps

Separate whites from yellows.

Whisk the yolks and the sugar + the vanilla sugar, then add the milk

Add the cocoa powder

Add the sifted flour and bakking powder then the cinnamon

Beat the whites until stiff with a pinch of salt or a tsp. lemon juice

Gently fold the egg whites into the preparation

Pour into a buttered mold and bake at 180 ° C (preheated oven) for 35 minutes

Prepare the whipped cream: whip the very cold cream in a very cold container too. Add the icing sugar once the cream has started to thicken. Add vanilla and whipped cream if you have it.

Assemble the cake: cut the sponge cake in 2 or 3 once it has cooled

Soak the sour cherry syrup (here it is possible to put a few drops of Kirsch to make the cake alcoholic)

Spread a layer of whipped cream, scatter a few sour cherries, and repeat with the other layers

Finish the cake by covering it with whipped cream and chocolate shavings.
